How long is the bathroom out of use?
18 to 25 days for a full renovation. The waterproofing and flood test account for about a week of that and cannot be compressed without accepting real risk.
Should I replace the concealed plumbing?
In a flat over 20 years old, yes. The pipe is behind tile you are already removing — doing it now costs a fraction of doing it later, when it means breaking a new bathroom.
